That’s quite a deep treatise for the lowly quesadilla! Great food for thought! Half way through the article I had to go make two quesadillas with tortillas de harina, Manchego cheese (substitute Oaxaca when I don’t have Manchego), and the last of our squash flowers because it’s cold at 6,500 foot level!
